“The World is My Restaurant.”
Chef Michael Diaz de Leon is a first generation Mexican-American born on the border of México and the United States, in the culturally rich city of El Paso, Texas. He spent most of his life in the duality that exists in being raised in a border town and has always had an affinity for creating connection and community through food. Formerly of BRUTØ in downtown Denver, a 3 year endeavor creating an omakase tasting menu of locally and regionally sourced food producing little to no waste, Michael is currently embarking on a journey of exploration and collaboration in an effort to learn through hands-on experience. His new pop up dinner experiences will create and share space at the table for all individuals through food, wine & community.
His new restaurant is slated to open 2025.
Chef was awarded the San Pellegrino Starchefs Game Changer Award in 2022, followed by becoming a finalist for the James Beard Foundation nomination for Best Chef Mountain Region and the first Mexican chef in Colorado to be awarded the Michelin Guide’s Green Star for Sustainability and 1 Star for his work at BRUTØ in 2023.
